Pilaf

1 brown onion, diced

1 eggplant, diced

3 cloves garlic, minced

2 medium tomatoes or 400ml tin tomatoes

1.5 cups (350g) basmati rice

225g halloumi

1 tsp chili flakes

1 bunch mint, parsley, or rosemary leaves, chopped

500ml vegetable stock

1 cup greek yoghurt

1 bunch coriander

3 jalapenos or green chilis

1 tsp salt

1 tsp cardamom

1 tsp cumin

50ml olive oil

Saute onion, eggplant, garlic, and tomatoes. Add rice and stock. Add spices, herbs, and halloumi (diced). No need to fry halloumi beforehand.
