Slow Cooker Beef and Noodles

2–2.5 lbs (900g–1.1kg) beef chuck roast

1 tbsp olive oil

1 medium onion, sliced

3 cloves garlic, minced

4 cups beef broth

1 tbsp Worcestershire sauce

1 tsp onion powder

½ tsp garlic powder

½ tsp dried thyme

Salt and black pepper to taste

12 oz (340g) egg noodles

2 tbsp cornstarch + 2 tbsp cold water (optional, for thickening)

Fresh parsley, for garnish (optional)

Sear the beef (optional but recommended): In a skillet, heat olive oil over medium-high heat. Sear the chuck roast on both sides until browned, about 2–3 minutes per side.

Add beef to slow cooker. Top with sliced onion, minced garlic, beef broth, Worcestershire sauce, onion powder, garlic powder, thyme, salt, and pepper.

Cover and cook on LOW for 8–9 hours or HIGH for 4–5 hours, until the beef is fall-apart tender.

Shred the beef directly in the slow cooker using two forks.

Cook egg noodles separately according to package instructions until just tender. Drain and stir into the slow cooker. (Or add uncooked noodles during the last 30–40 minutes of cooking with extra broth.)

Optional: For thicker gravy, stir in a cornstarch slurry (2 tbsp cornstarch + 2 tbsp cold water) and cook on HIGH for 10–15 minutes.

Serve warm, garnished with fresh parsley if desired.
