High Protein & High Fibre Oat Bread

This simple bread is great for your gut! It’s high in fibre and protein, it contains prebiotics, which feed the good bacteria in your gut. It’s nutrient dense, gluten free and grain free, and perfect for supporting digestion, stabilising blood sugar, and keeping you full for longer.

This is best served fresh or else toasted, and it freezes well too. As it doesn’t contain flour, it doesn’t rise as much as normal bread, so if you want a thicker slice, just double the ingredients!
Ingredients: (makes 10 slices)
200g oats (smaller the better)
75g mixed seeds
300g cottage cheese or Greek Yoghurt
1 tbsp nutritional yeast
1 tbsp flaxseed
½ tsp sea salt with seaweed
2 eggs
2 tsp baking powder

Preheat your oven to 180°c and lightly grease a loaf tin.
In a bowl, mix all ingredients together until well combined. You can blitz the cottage cheese if you prefer.
Pour the mixture into your loaf tin and smooth over the top.
Bake for 45 minutes, or until golden brown and firm to the touch.
Let it cool in the tin for 10 minutes, then transfer to a wire rack.
Slice and enjoy!
