crispy golden parsnips

600g parsnips, peeled and cut into chunky chips

2 tbsp sunflower oil

2 tbsp honey

Black pepper

2 tbsp plain flour

30g Parmesan, grated

4 sprigs of thyme, plus extra leaves for serving

步驟

1 Preheat the oven to 180°C/160°C fan/gas mark 4.

2 Bring a pan of water to the boil and cook the parsnips until just barely tender. Drain well and allow to steam dry for 1-2 minutes.

3 Spread the parsnips out on a large baking tray lined with parchment paper.

4 In a bowl, stir together the oil and honey with a pinch of pepper. Brush the parsnips with the honey mixture.

5 In a small bowl, mix together the flour and Parmesan. Sprinkle over the parsnips and toss to coat. Add the sprigs of thyme. Bake for 25-30 minutes until crispy and golden. Season with black pepper and scatter with fresh thyrne leaves, to serve.
