Chocolate Thin Mint Brownies Recipe

Brownie:

1 ½ cups butter, melted (339 g)

¾ cup cocoa, natural (62 g Ghirardelli’s)

3 cups sugar (600 g)

6 eggs (beaten)

1 ½ teaspoon vanilla

¾ teaspoon salt, table

2 ¼ cup flour (270 g)

Mint frosting:

¾ cup butter (softened)(170 g)

3 Tablespoons milk

3 cups powdered sugar (375 g)

1/2 + 1/8 teaspoon peppermint extract

2 teaspoons Lyles Golden syrup

4 drops green food coloring (optional)

Chocolate:

2 ¼ cup semi-sweet chocolate chips

¾ cup butter OR

Buttercream chocolate frosting:

1 1/4 cups (282 g) softened unsalted butter

3 1/2 cups (420 g) powdered sugar

3/4 cup (62 g) cocoa powder, Dutch

1/4 teaspoon salt

1 teaspoon vanilla

1/4 cup whole milk or cream

步驟

Pre-heat oven to 350℉.

Brownies

In a large bowl, whisk together melted butter and cocoa. Add sugar, eggs, vanilla and salt. Mix well, then stir in flour by hand. Do not over mix.

Spread batter in greased 12 x 17 inch cookie sheet and bake for 25-30 min.

Cool and then put in the freezer for 20 minutes.

Frosting

Mix butter, milk, powdered sugar and extract. If you want to add color, add in food coloring (you could also use red food coloring).

Remove from freezer and frost brownies, then put in freezer for another 20 minutes.

Chocolate

Melt chocolate chips and butter in the microwave and spread on top of the frosting layer. Freeze another 20 minutes to set.

Chocolate frosting: beat butter for 1 minute. Add other ingredients and mix on low until blended then beat on high 3 minutes, scraping bowl as needed. If too stiff, add another tablespoon milk and beat until blended.

筆記

3/13/26 made gluten free using 135 g tapioca flour, 68 g millet, 67 g buckwheat flour and 1/2 teaspoon xanthan gum, and let sit 10 minutes before baking. I used chocolate frosting recipe I added from Sally’s. Great!

BYU mint frosting also contains 1 tablespoon light corn syrup so I put 2 teaspoons Lyle Golden Syrup. Freeze the brownies after adding the mint frosting before adding the chocolate frosting.

You can make chocolate buttercream frosting vs chocolate topping listed.

To make gf use same amount of flour and 1/2 teaspoons xanthan gum. Let sit10 minutes before baking.
