1 ½ lbs boneless, skinless chicken thighs

1 bunch green onions, cut into 2-inch pieces (plus extra for garnish)

1 bulb garlic, halved lengthwise

6 cloves garlic, minced

1 cup chicken broth

Juice of 2 limes

2 tbsp soy sauce

2 tbsp EVOO

Cut green onions into 2-inch pieces and slice a few extra for garnish.

Halve the garlic bulb lengthwise and mince 6 additional cloves.

In a bowl, mix lime juice, chicken broth, and soy sauce.

Heat oil in a pan over medium-high heat. Brown the chicken—about 8 minutes on the first side, 5 minutes on the second.

Add green onions and cook until wilted (not browned), then add minced garlic and cook briefly until fragrant.

Pour in the liquid mixture, partially cover, and simmer for 15 minutes—flipping the chicken halfway through.

Remove the lid, shred the chicken with tongs, and let the sauce reduce to your desired thickness.

Serve over rice and garnish with extra green onions.
