Chickpea Feta Cucumber Quinoa Salad

2 ½ cups cooked quinoa (about 1 cup uncooked)

¼ fresh cup spearmint (chopped)

1 cup fresh curly parsley (chopped)

2 cups chickpeas (rinsed and drained, about 1 x 397 ml can)

1 cup cucumber (diced)

1 cup feta (crumbled)

1 avocado (diced)

1 cup red onion (diced)

2 lemons (juiced)

¼ cup extra virgin olive oil

Salt (to taste)

Black pepper (to taste)

In a large mixing bowl, add quinoa, mint and parsley.

Top base with chickpeas, feta cheese, cucumber, avocado, and red onion. Drizzle with lemon juice and olive oil. Season with salt and black pepper,to taste.
