Preserved lemon gel

400g preserved lemons, seeds removed

150g sugar

90g water

½ tsp turmeric

步驟

Bring sugar and water to a simmer in a pot.

Once the sugar is dissolved, add the lemons and bring to a boil for 2 minutes.

Transfer to blender and blend on high for 4-5 minutes to activate pectin.

Midway through, add turmeric for color, blend in.

You’ll know right away when the pectin has activated because it will immediately thicken and give your blender a hard time.

Spread on a tray with some film on top to prevent a skin.

Cool completely in the fridge, and it’s ready to use.

筆記

I like adding it to seafood like oysters, a few dots on grilled fish, etc.
