Paneer Tikka Masala

For the paneer and marinade

  • 300 grams paneer (cubed)

  • 115g Skyr

  • 1 teaspoon ginger powder

  • ½ teaspoon smoked paprika

  • ½ teaspoon garam masala

  • ⅛ teaspoon turmeric

  • ¼ teaspoon salt

  • 1 teaspoon lemon juice

  • 1 teaspoon oil

  • 1 small bell pepper

For the sauce

  • olive oil

  • 1 large onion

  • 400g chopped tomatoes

  • 1 teaspoon ginger powder

  • 20g cashew nuts

  • 1 teaspoon smoked paprika

  • 1/2 teaspoon cayenne pepper

  • 1 teaspoon garam masala

  • ¼ teaspoon salt (adjust to taste)

  • water to blend

  • 20cl Heavy cream

  • One spoon of skyr to top

Preparation

  1. To a mixing bowl, add skyr, paprika powder, ginger powder, garam masala, turmeric, oil, lemon juice & salt.

  2. Mix well and taste test it. Add more salt if required. Add paneer cubes and bell peppers & gently mix well to coat the paneer with the marinade.

  3. Preheat the oven to 220 C.

Tikka Masala

  1. Line a baking tray with foil. Place the paneer on the baking tray & grill for 10 minutes, turning them to the other side after 10 mins. Remove them when golden and crisp.

  2. Heat half of the oil and add the chopped onions. Saute them well until transparent or golden on a medium heat.

  3. Add tomatoes, cashews and salt. Saute all of these well until the tomatoes turn mushy and soft.

  4. Stir in paprika powder, cayenne pepper & garam masala, Saute for another 2 mins, until the masala smells good & aromatic.

  5. Cool this completely and add to a blender. Pour water and blend to a smooth puree.

  6. Heat the sauce in the pan again. When it bubbles, add ginger powder & saute for 1 to 2 mins, until the raw smell disappears.

  7. Taste test and add more paprika powder if you want to achieve a brighter color.

  8. Pour water to bring this to a gravy consistency. Cook covered until the gravy turns thick for about 10 mins and you see traces of oil on top. Keep stirring in between. Taste the gravy & add more salt if needed. Rest this aside.

  9. Transfer grilled paneer tikka along with veggies & onions to the tikka masala gravy.

  10. Pour the cream. Gently mix. Garnish with skyr.

  11. Serve paneer tikka masala with Roti, Butter Naan, Basmati Rice or Jeera rice
