French Onion Mushroom Pot Roast

- Season the chuck roast generously with salt and pepper

- Heat olive oil in a Dutch oven and sear the roast on all sides until deeply browned, then remove

- Add butter, onions, and mushrooms to the pot and cook until caramelized and golden

- Stir in garlic, Worcestershire sauce, broth, wine, and thyme

- Return roast to the pot, cover, and cook at 325°F (165°C) for 3 hours until fork-tender

- Slice the roast and spoon onion-mushroom gravy over the top before serving
