Spinach & Feta Tart Recipe

This dish has 90g Protein 💪

150g frozen Spinach

80ml water

1 onion chopped

Salt & pepper

3 Eggs

3-4 Spring onion chopped

Fresh Dill or parsley

1/2 tsp dried Oregano & garlic powder

30-40g grated Parmesan

120g Grated Mozzarella

200g crumbled Feta

100g plain flour or semolina (I used a mix)

For GF you could use chickpea flour or almond

Preheat your oven to 210C

Fry your chopped onion for a few minutes and throw in the frozen spinach and some salt and pepper then add the water and stir the spinach blocks around till the water evaporates and the onion and spinach are soft. The water will evaporate and the spinach will be tender,

Set aside on a plate to cool and get your other ingredients ready.

In a large bowl add the eggs and whisk, add all the other ingredients including the spinach and mix well.

Add some parchment paper to a shallow baking dish (I like to grease the dish first so the paper stays in place)

Spread the mixture around the dish, it won’t seem enough at first but keep spreading it. You can use a wet spatula to help smooth it out. It’s delicious hot or cold

Bake for 15-18 minutes (depending how crunchy or soft you want it) keeping eyes on it.
