My Sunday Started with a Simple Beef Joint. It’s Ending with

This is the laziest Sunday Beef dinner, but one of the tastiest. I had 4 Yorkshire puddings in the freezer that you saw me make last week, added some roast potatoes, veg and lots more horseradish on the side with lashings of gravy. Yum! Have a great evening - and what is your pudding?

1 kg beef Feather Blade

1 large red onion sliced

2 tablespoons olive oil

WHISK ALL THE REMAINING INGREDIENTS IN A JUG

THIS IS THE FLAVOUR BOMB!

Tablespoon garlic purée

1 tablespoon dark brown sugar

1 tsp thyme

2 bay leaves tied with some thyme and rosemary

2 tbsp Worcestershire sauce

250ml Guinness/Ale

400ml beef stock

Salt and black pepper to taste but at least a good teaspoon of sea salt at least but taste it

2 Tablespoons wholegrain mustard

3 Tablespoons hot horseradish

1 Tablespoon tomato purée

2 Tablespoons of cornflour mixed with a little water to thicken in the last hour

Brown the beef in a little olive oil add the onions and just fry gently.

THEN POUR EVERYTHING ELSE over the meat and onions.

On HIGH in the pressure cooker for 6 hours but check your beef for tender and pull apart ❤️

I served it with honey carrots, green veg of your choice, roast potatoes and Yorkshire puddings - lashings of horseradish on the side and enjoy
