12 oz linguine

4 cups rotisserie chicken, shredded

1 lb button mushrooms, sliced

1 medium onion, chopped

4 garlic cloves, minced

2 tbsp olive oil

4 tbsp unsalted butter

1/3 cup all-purpose flour

3 cups low-sodium chicken broth

2 cups half & half

1 tbsp lemon juice

1½ tsp sea salt

¼ tsp black pepper

1½ cups shredded mozzarella cheese

¼ cup fresh parsley, chopped

Cook linguine according to package directions and drain. In a large skillet, heat olive oil and sauté onion, garlic, and mushrooms until tender. Add butter and melt, then stir in flour and cook 1 minute. Slowly whisk in chicken broth and half & half until smooth and thickened. Stir in lemon juice, salt, and pepper. Add chicken and cooked pasta, mixing well.

Transfer to a baking dish, sprinkle mozzarella on top, and bake at 375°F (190°C) for about 20 minutes until bubbly and golden. Garnish with fresh parsley before serving.
