Swiss Steak

2-3lb chuck steaks

Salt, black pepper (for seasoning the meat)

3 yellow onions (depending on size and meat quantity)

4 cloves garlic, sliced

28oz can of whole tomatoes, drained and then hand-crushed

1/4 tsp dried oregano

1 tbsp butter

1 tsp soy sauce

2 tsp pickled jalapeno liquid or apple cider vinegar

步驟

Sear off chuck steaks in batches, seasoning top side as bottom sears with salt and pepper. (Instant Pot: Saute - HIGH)

Drain off excess fat down to 1-2tbsp. Add onions until aromatic, then add garlic and briefly saute until aromatic. (Instant Pot: Saute - HIGH)

Add tomatoes, stopping to scrape up fond with the tomatoes' moisture. Add oregano, butter, and soy sauce.

Cook 45 minutes, then natural pressure release. Stir in vinegar.

Serve with bread or rice.

筆記

Increase to 3tbsp butter for round steak and can skip fat-skimming step.
