Cuban Chicken Salad

2 cups of cooked chicken meat (preferably roasted)
1 large onion
3 eggs
1 roasted red bell pepper
½ cup of green olives
1 cup of pineapple or apple, diced small
1 ½ cups of mayonnaise
1 tablespoon of mustard
1 pound of potatoes (2 medium)
Salt to taste
Ground black pepper to taste
Pimiento strips (optional, for garnish)
Lettuce leaves (optional, for serving base)

Step 1: Potatoes just right
Peel and wash the potatoes. Cut them into cubes and cook in salted water until al dente. Drain and let cool.
Step 2: Eggs ready
Boil the eggs for 10–15 minutes. Cool, peel, chop into small pieces, and set aside.
Step 3: Finely chopped
Dice the onion, roasted pepper, and olives. Shred the chicken into thin strands or small pieces so the flavor spreads evenly.
Step 4: Base mix
In a large bowl, combine the cooled potatoes, shredded chicken, onion, pepper, pineapple or apple, and olives. Add the mayonnaise and mustard. Mix gently. Adjust with salt and pepper.
Step 5: Chill time
Cover with plastic wrap and refrigerate for at least 1 hour to allow flavors and texture to settle.
Step 6: Presentation
Arrange lettuce leaves on a serving platter. Place the cold salad on top and garnish with strips of pimiento, olives, and thin slices of boiled egg if desired. Serve well chilled.
