CHILI'S ENCHILADA SOUP

2 tablespoons olive oil

2 teaspoons minced garlic

½ cup diced onion

1 cup masa harina (corn tortilla flour)

2 (14.5-ounce) cans chicken broth

4 cups water

1 cup enchilada sauce

1 teaspoon salt

1 teaspoon onion powder

½ teaspoon ground black pepper

½ teaspoon cumin

3 boneless, skinless chicken breasts, cooked and shredded

2 cups shredded cheddar cheese

Corn tortilla chips

步驟

Heat a large pot or Dutch oven over medium-high heat. Add olive oil and allow it to heat through. Add garlic and onion. Cook until the onions are translucent and a bit golden, about 10 minutes. Add masa harina to the onion mixture and cook and stir for 1 to 2 minutes. Slowly stir in chicken broth until combined and smooth. Mix in water, enchilada sauce, salt, onion powder, pepper, cumin, and chicken.

Cover and simmer 20 minutes. Mix in cheese until completely melted. Serve with tortilla chips.
