Crispy Okra Fries

250g Okra

1 Tbsp Ginger

1 Tbsp Garlic

1 ½ Tbsp Cornflour

3-4 Tbsp Chickpea flour

1/2 Tsp Salt

1/2 Tsp Red Chilli Powder

1 Tsp Turmeric

1 Tsp Semolina

1/2 Tsp Asafoetida/Hing

1/2 Tsp Chaat Masala

MAGIC MASALA:

1 Tsp Salt

1 Tsp Red Chilli Powder

1/2 Tsp Chaat Masala

2 Tsp Dried Mango Powder/Amchur

步驟

Cut the ends of Okra and cut into 4 quadrants. Add in the ginger, garlic, cornflour, chickpea, salt, red chilli powder, turmeric, semolina, asafoetida and chat masala mixing well using your hands.

Let the mixture sit for 10 minutes. In the meantime heat up the oil on high until super hot. Once bore place in your okra and let it fry for up to 3 minutes until crispy golden brown

Drain the excess oil of the okra fries on a paper towel and in the meantime make the magic masala by combining salt, chilli powder, chaat masala and amchur

Once the excess oil has drained sprinkle the magic masala all over and shake
