Chicken Breast Stir Fry 鸡胸炒菜

1kg Chicken Breast (diced or sliced)
1tbsp baking soda
1tbsp soy sauce
1tsp dark soy sauce
1tsp oyster sauce
1tbsp black pepper
1tsp starch
1/4cup of water
Any vegetables that fit the stir fry
步驟
Dice or slice chicken into small bite sizes pieces. Velvet chicken by marinating in baking soda and water for 1hr or overnight. Afterwards wash chicken breast and marinate in all the other sauces and desired seasoning for 30min (optional: if desired can marinate at the same time as velveting but might have slight after taste, or can skip the velveting step entirely if preferred or if working with thighs).
Stir fry on medium-high heat (light spray of oil) contents until cooked, add vegetables when half cooked and continue to stir fry until cooked.
