1/4 cup creamy peanut butter

2 tablespoons Thai red curry paste

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon rice wine vinegar

2 tablespoons chili-garlic sauce

1 tablespoon sesame oil

1 tablespoon honey (or maple syrup for vegan)

1 teaspoon lime juice

1 teaspoon cayenne powder (optional, adjust to taste)

1 teaspoon garlic powder

1 teaspoon ginger powder

1-3 tablespoons water (as needed for thinning)

2 tablespoons roasted peanuts (crushed or chopped for garnish)

In a small mixing bowl, combine all ingredients except for the water.

Whisk vigorously until the mixture is completely smooth and creamy. At first, it might look a little stiff—that's normal! Just keep whisking.

Add the water, one tablespoon at a time, whisking continuously until you reach your desired consistency. For a thick dip, you might only need one tablespoon. For a pourable dressing, you might need all three.

Serve immediately, garnished with crushed peanuts, or store in an airtight container in the refrigerator.
