Strawberry Season Is Here : the Dreamiest Mousse

250g fresh strawberries

150ml heavy cream (well chilled)

40g icing sugar (divided)

1 egg white

Fresh strawberries (for garnish)

Blend the strawberries until you get a smooth purée.

In a bowl, whip the chilled heavy cream with half of the icing sugar until stiff peaks form.

Gently fold the strawberry purée into the whipped cream using a spatula.

In a separate bowl, whisk the egg white with the remaining icing sugar until stiff and glossy.

Delicately fold the egg white into the strawberry cream to keep it light and airy.

Pipe or spoon into glasses and refrigerate for at least 2 hours to set.

Top with fresh strawberry quarters and enjoy! 😍
