These Pistachio Almond Cookies Are GF - Passover

If you’re looking for an easy Passover dessert, these flourless pistachio almond cookies are it. They’re naturally gluten free, kosher for Passover, and made with simple ingredients in just one bowl.

Soft in the middle, slightly crisp on the edges, and packed with pistachio and almond flavor. Honestly one of the easiest Passover cookies you’ll ever make.

Perfect for Passover baking, gluten free baking, or anytime you want a quick homemade cookie.

Pistachio almond cookies

3 cups almond flour (I use Kirkland brand)

1 1/2 cups pistachios (I use the salted Kirkland ones), pulsed in food processor until fine.

1 1/2 cups confectioners sugar

3 egg whites

1 1/2 tsp baking powder

Pinch salt

Seeds of One vanilla bean (split in half and scrape out seeds) - you can also use 2 tsp vanilla extract.

In a bowl with a whisk, beat egg whites until foamy. Add in vanilla seeds/ extract.

Mix in almond flour, ground pistachios, confectioners sugar, baking powder and pinch salt.

Scoop into tbsp sized balls. Roll into a ball and flatten slightly.

Place on a parchment lined baking sheet.

Bake at 350 (preheated) for 11-13 minutes until tops are slightly cracked and bottoms are golden.

Cool.

Dust with confectioners sugar.
