Brown Sugar Pineapple Chicken

500g boneless chicken thighs or breasts (cut into chunks)
1 cup pineapple chunks (fresh or canned)
½ cup pineapple juice (from can or fresh)
⅓ cup brown sugar
¼ cup soy sauce
3 cloves garlic (minced)
1 tbsp ginger (grated, optional)
1 tbsp cornstarch
2 tbsp water
1 tbsp oil
Salt & black pepper (to taste)
Optional: chopped green onions & sesame seeds for garnish

Prep the chicken
Season chicken lightly with salt and pepper.
Cook the chicken
Heat oil in a pan over medium heat. Add chicken and cook until golden and fully cooked (about 6–8 minutes). Remove and set aside.
Make the sauce
In the same pan, add garlic and ginger. Sauté for 30 seconds until fragrant.
Add sweetness & flavor
Pour in pineapple juice, soy sauce, and brown sugar. Stir well and bring to a simmer.
Thicken the sauce
Mix cornstarch with water, then add to the sauce. Stir until it thickens.
Combine everything
Add cooked chicken and pineapple chunks back into the pan. Toss to coat in the sauce.
Final cook
Let it simmer for 2–3 minutes so flavors blend beautifully.
