My foolproof 5 lb dough + step-by-step

Ingredients (5 lb – for hafrashah):
5 lb (2.27 kg) all-purpose flour
2 cups (460g) sugar
4 ½ tbsp (60g) active dry yeast
5 tsp salt
2/3 cup (160 ml) oil
4 ½ cups (1.1–1.2L) warm water
Toppings: sesame seeds + 1 egg (for brushing)

Add everything to a bowl (no need to bloom yeast).
Gradually add water until a soft, slightly sticky dough forms.
Knead:
20 min by hand OR 10–12 min in mixer
Cover + let rise 1.5–2 hours until doubled.
Optional: separate challah with a blessing)
Shlissel Key Shape:
Main braid:
6 strands, 115g each
2 sesame, 4 plain
place one seated strand in between two plain strands, three and three and then just twist them.
Top:
2 pieces, 250g each
1 plain, 1 sesame
one next to the other and twist them.
Teeth:
6 pieces, 10g each
make 2 mini braids (3 strands each)
Assemble into key shape 🔑
Finish:
Cover + proof 30 min
Brush egg wash on plain strands only
Bake at 375°F (190°C) for 30–35 min until deeply golden
