Very Crispy Potatoes

15 Baby Potato
2 tablespoon Oil
1 teaspoon Salt
1 tablespoon Butter
2 ounce Parmesan Cheese
to taste Fresh Chives
to taste Sour Cream
步驟
Preheat oven to 400 degrees F (200 degrees C).
Boil Baby Potato (15) in salted water till tender to a knife.
Strain, and place on a roasting tray.
Drizzle with Oil (2 Tbsp), and toss to coat.
Mash gently with a potato-masher.
Season lightly with Salt (1 tsp).
Separate the Butter (1 Tbsp) into little knobs. Add knobs of butter on each potato.
Sprinkle generously with freshly grated Parmesan Cheese (2 oz).
Roast in the oven for 25-30 minutes or until crispy.
Serve immediately as is or with with chopped Fresh Chives (to taste) or Sour Cream (to taste). Enjoy!
