Marinated Baby Artichokes

1 lemon, cut in half

12 baby artichokes, about

1 pound

Salt

4 tablespoons extra-virgin olive oil

3 tablespoons lemon juice

2 teaspoons dried

Mediterranean oregano, such as Greek oregano

Freshly ground black pepper

Squeeze half the lemon into a bowl of water. Reserve other half-lemon te rub into the cut portions of the artichokes to prevent darkening. Break off the tough outer leaves of the artichokes until the pale yellow leaves appear. Trim the green portion at the tips of the leaves. Trim the green surface on the base and stem of the artichokes. As you work, place each trimmed artichoke into the acidulated water. In a nonreactive medium-sized pot, cook artichokes in salted boiling water to cover for 8 to 10 minutes, or until just tender. Drain well in a colander. Wrap in a clean dish towel to absorb water trapped between leaves. Place the artichokes in a bowl. Add the olive oil, lemon juice, oregano, and salt and pepper to taste. Toss the artichokes in the marinade. Set aside at room temperature for an hour, stirring occasionally. Or refrigerate for up to 4 days, covered with plastic wrap.
