Ingredients:

4 boneless, skinless chicken breasts

1 cup cherry tomatoes, diced

1/4 cup fresh basil, chopped

2 cloves garlic, minced

1 tablespoon balsamic vinegar

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 cup mozzarella cheese, shredded

1/4 cup grated Parmesan cheese

Directions:

Preheat oven to 375°F (190°C).

In a medium bowl, combine the diced cherry tomatoes, fresh basil, minced garlic, balsamic vinegar, olive oil, salt, and black pepper. Mix well and set aside to let the flavors meld.

Place the chicken breasts in a baking dish and season both sides with salt and pepper.

Spoon the bruschetta mixture evenly over the chicken breasts, ensuring they are well covered.

Sprinkle the shredded mozzarella cheese and grated Parmesan cheese on top of the bruschetta-covered chicken.

Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.

Remove from the oven and let rest for a few minutes before serving.
