Pumpkin And Vegetable Soup

2 cups of fresh pumpkin or one 15 oz can

4 cups vegetable broth

2 cups water

1 red onion, peeled and chopped

2 celery stalks, chopped

2 yams, peeled and chopped

3 cloves garlic, peeled and chopped

1 in fresh ginger, peeled and grated

1 tbsp white sugar

2 tsp kosher salt

1 tsp turmeric

1/4 tsp ground allspice

1/4 tsp ground nutmeg

Heavy whipping cream, 1 tbsp per family member (optional)

Garnish with chopped green onion (optional)

步驟

Add pumpkin to crockpot.

Add the chopped vegetables.

Add the spices and sugar.

Stir in the vegetable broth and water.

Cover and cook on low for 8 hours.

Use an immersible blender to blend about 3/4 of the soup.

Stir in cream.
