Crispy Herb Roast Potatoes

  • 2000 g floury potatoes

  • 30 g vegetable baking fat (e.g. Trex)

  • 15 g butter

  • 1 tsp fine salt, plus extra to finish

  • 15–30 g cornflour (or plain flour)

  • 6 garlic cloves, crushed

  • 3–4 sprigs fresh rosemary

  • 3–4 sprigs fresh thyme

  • Small handful fresh parsley, finely chopped

  • Small handful fresh chives, finely chopped

  • 1 tsp freshly ground black pepper

  1. Peel the potatoes, cut them into large, even quarters, and rinse them in cold water.

  2. Put the potatoes in a large pan, cover with cold water, add 1 tsp fine salt (optionally a stock cube or pinch of baking soda), bring to a boil, and parboil for 20 minutes.

  3. While the potatoes cook, place the vegetable baking fat and butter in a large roasting pan (or 2 pans for extra space). Preheat the oven to 190°C and put the pan in the oven for about 10 minutes, until the fat is hot but not smoking.

  4. Drain the potatoes well and let them sit in the colander or pan for about 5 minutes to steam dry.

  5. Sprinkle the cornflour evenly over the potatoes, put the lid on the pan, and gently shake so the edges rough up and the potatoes are evenly coated in flour.

  6. Carefully transfer the potatoes to the hot roasting pan so they sizzle as they hit the fat, then toss or turn them so they are well coated and have plenty of space between them.

  7. Roast the potatoes in the oven at 190°C for 95–100 minutes. Every 20–30 minutes, take the pan out and turn the potatoes so they brown evenly on all sides.

  8. After 50–60 minutes of roasting, add the crushed garlic cloves and the rosemary and thyme sprigs to the pan, then return it to the oven.

  9. When the potatoes are deep golden and very crispy all over, remove the pan from the oven. Sprinkle immediately with the chopped parsley and chives, extra salt to taste, and the black pepper. Serve straight away.

筆記

Make-ahead tip: You can parboil, steam-dry, flour, and rough up the potatoes a few hours in advance. Store in the fridge on a tray, then roast in hot fat just before serving.

Space matters: For maximum crispiness, don’t crowd the pan. Use two roasting trays if needed.
