1 cup (225g) full-fat cottage cheese

1/3 cup (40g) shelled unsalted pistachios

2–3 tablespoons unsweetened almond milk (adjust for texture)

1–2 tablespoons raw honey (to taste)

1/2 teaspoon pure vanilla extract

Add cottage cheese, pistachios, almond milk, honey, and vanilla extract into a high-speed blender or food processor.

Blend for 60–90 seconds until completely smooth and creamy. Scrape down the sides if needed.

Taste and adjust sweetness (add a little more honey if desired).

Pour mixture into a freezer-safe container.

Freeze for approximately 2 hours.

Let sit at room temperature for 5–10 minutes before scooping for a creamier texture.

Optional: Top with crushed pistachios before serving.
