Mujadara Salad

Long English Cucumbers

Roma Tomatoes (you want to choose tomatoes that are on the harder side)

Italian Parsley

1 Lemon

Cut up tomato and cucumber into very small cubes, around 1/8 an inch. However, this takes a long time and some willpower, so just don’t make the cubes much bigger than 1/4 an inch.

Add around 1/4 cup of finely chopped parsley without the thick stems.(I don’t like Parsley, so I often make it without)

The seasoning is to taste, start by squeezing 1/2 a lemon and add a few pinches of salt. Mix it up and taste. Continue adding until you like it, but it should taste fairly lemony and salty. If you think you have added too much lemon and salt, add more cucumber and tomato until you are happy!

Mix all ingredients together, and serve side by side to the Mujadara. The Mujadara should be hot or warm, and the salad should be cold or room temp.
