Roasted Pork Loin with Garlic Herb Potatoes

For the Pork

1 pork loin roast (2–3 lbs)

2 tbsp olive oil

2 tbsp melted butter

4 garlic cloves, minced

1 tsp smoked paprika

1 tsp dried rosemary (or fresh)

1 tsp dried thyme

1 tsp dried parsley

Salt & black pepper, to taste

For the Potatoes

1 ½ lbs baby potatoes, halved

2 tbsp olive oil

1 tsp Italian seasoning

1/2 tsp garlic powder

Salt & pepper, to taste

Optional

1/4 cup chicken broth or white wine (for roasting juices)

Fresh parsley, chopped (for garnish)

Prep the Pork and Potatoes

Preheat oven to 400°F (200°C).

Place halved baby potatoes in a baking dish and toss with olive oil, garlic powder, Italian seasoning, salt, and pepper.

Make the Herb Rub

In a small bowl, mix olive oil, melted butter, minced garlic, paprika, rosemary, thyme, parsley, salt, and pepper.

Rub this mixture all over the pork loin.

Assemble the Pan

Place the pork loin in the center of the potatoes.

Pour chicken broth or white wine into the bottom of the pan (optional but makes great juices for serving).

Roast

Bake uncovered for 45–60 minutes, or until internal temperature reaches 145°F (63°C).

Halfway through, gently toss the potatoes so they roast evenly.

Rest, Slice & Serve

Let pork rest for 10 minutes before slicing — this keeps it juicy.

Spoon pan juices over the pork and potatoes.

Garnish with chopped parsley.
