A twist on Kevin Armstrong’s East 8 Hold Up, which is one of my favourite cocktails. As are many things Jungle Bird adjacent.
I was in the Difford’s guide website comment section under the East 8 Hold Up recipe. Clearly in my own echo chamber of East 8 Hold Up enjoyers.
A comment from the user Adam G. Manning suggested using some Peychaud’s bitters and to use more passionfruit syrup instead of simple syrup. Which turned out to be a great idea
The next time I made this drink I ended up changing the ratios slightly, used tequila and completely took the piss with the bitters. What’s nice about making cocktails at home is you do indulge in dark desires, such as putting too much bitters in a cocktail.
Feel free to add bitters of your choice before shaking, but unfortunately as an Instagram person I’m forced to try make the drink as visually colourful as possible… is what I was going to say. But it turns out the Peychaud’s on top gave it an aroma that was very enjoyable
45ml/1.5oz Reposado tequila
15ml/0.5oz Aperol or alternative
22.5ml/0.75oz Pineapple juice
15ml/0.5oz Passionfruit syrup
22.5ml/0.75oz Lime juice
Bitters on top, if you’re not like me add like 3 dashes
Pineapple leaf garnish
