Sophie-Compatible Beef Burgundy

配料

1.5-2lb chuck steak

4-6 shallots, quartered

4 garlic cloves, minced

1 carrot, sliced

1 tbsp all-purpose flour

3 tbsp tomato sauce

1 cup beef stock

1 cup red wine (Pinot Noir, Cabernet Sauvignon)

1/2 tsp dried thyme

1 bay leaf

Salt & black pepper

步骤

Prepare salt & pepper mixture in small bowl.

In braiser, add oil and preheat under medium heat until hot. Sear off chuck steaks in batches until browned, seasoning side up with salt/pepper mixture and then flipping.

Remove meat from pan and saute shallots and carrot until softened, about 3 minutes, then add garlic and cook for 1 minute.

Add flour and cook for about fifteen seconds, then add stock, tomato paste, and wine. Liquid should be just above beef. Add herbs and bring to a simmer.

Cover and turn heat to low, then simmer for 1.5 - 2 hours.

Remove bay leaves. If too thin, cook down on stovetop about 5-10 minutes uncovered. Serve with rice, mashed potatoes, etc.

If Sophie can eat this, add 3 strips bacon and cook vegetables in bacon fat, then strain off the rest.
