This is my Recreation of a dish that I had ate in New York City. I don’t want to call out the restaurant because alhough the food was good. I felt that the portion that I got was minuscule for $26 and I knew I could make it myself .. so I did and it was seriously one of the best dishes I think I’ve ever made

Zucchini scallopini in lemon caper sauce over mashed potatoes 🌱

For the mash:

2 russet potatoes, peeled & cubed

1 tablespoon butter

1/4 cup plant based milk

Boil the potatoes for about 20 minutes or until fork tender. Strain and mash with milk & butter

For the mushrooms :

1 teaspoon sesame oil

1/2 cup slices shiitake mushrooms

1 tablespoon coconut aminos

Sauté the mushrooms until golden

For the sauce :

2 tablespoons butter, melted

2 garlic cloves shredded

Juice of 1 lemon

2 tablespoons capers

2 tablespoons fresh parsley, chopped

Melt the butter, add the garlic and cook for few minutes. Add the lemon juice and blend. Then add all the other ingredients

For the zucchini :

2 medium zucchini, sliced lengthwise into 1/4” strips

Flour

1 tablespoon butter

Dip the zucchini in the flour and pan fry in oil until golden on both sides
