The first is sodium citrate, used to adjust pH and enhance flavors. The second is vitamin C, which helps preserve both the color and delicate aroma of fresh elderflowers—bringing your liqueur closer to the industrial versions 😋!

Homemade Elderflower Liqueur

500mL · 16.66oz 40% ABV Vodka

45g Elderflower Flowers

342g Sugar

270g Water

10g Citric Acid

5 ½ Sodium Citrate (optional)

2 ⅕ Lemon Peel

1 ⅘ Ascorbic Acid (Vitamin C)

Start by removing the elderflower buds from the stalks, then place them in a sous vide bag with all the other ingredients. Double seal the bag to remove all the air, then place it in a sous vide bath set to 85°C or 185°F for 2½ hours ♨️.

Give the bag a gentle shake or two during the infusion to help everything mix evenly. Once it’s done, place the bag in an ice bath to chill, then strain your liqueur, bottle it, and it’s ready to enjoy in your next cocktail or spritz. Cheers 🥂!
