Ingredients (makes about 16 pancake bites):

1 cup cottage cheese (240 g)

2 large eggs

½ cup oat flour (60 g) (or almond flour for gluten-free)

1 tsp vanilla extract (5 ml)

½ tsp cinnamon (1 g)

1 tsp baking powder (4 g)

Pinch of salt

½ cup finely chopped apple (about 75 g)

1–2 tsp honey or maple syrup (5–10 ml, optional)

Step 1: Preheat & Prep

Preheat oven to 350°F (175°C) or air fryer to 350°F (175°C). Lightly grease a mini muffin pan or silicone mold.

Step 2: Mix Wet Ingredients

In a bowl, whisk together cottage cheese, eggs, vanilla extract, and honey or maple syrup until mostly smooth.

Step 3: Add Dry Ingredients

Stir in oat flour (or almond flour), cinnamon, baking powder, and salt until a thick batter forms. Gently fold in the chopped apple.

Step 4: Bake or Air Fry

Spoon batter into prepared molds, filling each about three-quarters full.

Oven: Bake for 15–18 minutes, until set and lightly golden.

Air Fryer: Cook for 10–12 minutes, until firm and cooked through.
