Kashke bademjan is my favorite dip on the planet— roasted eggplant, deeply caramelized onions, walnuts, and kashk, the tangy Persian whey that makes the whole thing.

I made this with my vegan friend, Ma’ayan; to make it dairy-free, we made our own vegan version of kashk with soaked cashews blended with lemon and salt. It gives us the same creamy, sour, and salty flavor profile. It was her first time trying kashke bademjan, and it was a success! She absolutely loved it.
