Ugly Duckling Cake

1 Box Yellow cake mix

16 ounce fruit cocktail undrained 1 can

2 ½ cups flaked coconut divided

2 eggs

½ cup brown sugar

½ cup granulated sugar

½ cup butter

½ cup evaporated milk

Preheat the oven to 325 degrees f

Grease 9 x 13" pan and set aside.

In large mixing bowl, combine cake mix with can of fruit cocktail, one cup coconut, and eggs.

Beat with an electric mixer at medium speed for two minutes.

Pour into prepared cake pan and then sprinkle with brown sugar (Image 2).

Bake for 45 minutes or until cake springs back when touched.

In a small sauce pan bring butter, sugar, and evaporated milk to a boil.

Boil for two minutes stirring constantly remove from heat and stir in remaining coconut.

Spread over hot cake. Served warm or cool!
