45ml/1.5oz Cognac
15ml/0.5oz Rhum Agricole Blanc
22,5ml/0.75oz Banana Liqueur
22,5ml/0.75oz Lemon Juice
7,5ml/0.25oz Demerara Syrup
HOW: Shake all with crushed ice / Dump in glass / Fill up glass with ice / Garnish.
Inspired by the ‘FAY WRAY’ of Matthew Belanger (Donna, NYC). Originally the base was split between Cognac and Rhum Barbancourt, and acidity came from Lime juice. I pulled the concept closer to Cognac and used Lemon Juice, but the general idea stayed the same.
Essentially it’s very close to a Mai Tai in build and spirit, but with a completely different flavor profile. Either way, a really good drink which is well worth recreating. Cheers!
