1 lb Schiaffoni pasta
3–4 tbsp good olive oil
1 small shallot, finely diced (optional but recommended)
6 garlic cloves, lightly smashed and peeled
2 pints (20 oz) Sungold tomatoes, washed and halved
Salt and black pepper, to taste
1–2 tsp Calabrian chili paste or red pepper flakes (optional, to taste) @Bono Extra Virgin Olive Oil
1/4 cup dry white wine (sav blanc or pinot grigio)
4 tbsp unsalted butter, to taste
1/2 – 1 cup finely grated Parmesan (plus more for garnish)
Handful of fresh basil leaves, torn
3/4–1 cup reserved pasta water
