Crispy Dim Sum Shrimp Balls

Shrimp Filling
2 lbs raw shrimp, peeled and deveined
1/4 cup green onions, chopped
1 tbsp soy sauce
1 tbsp fish sauce
1 tsp salt
1 tsp black pepper
1 tsp sugar
1 large egg
2 tbsp rice flour
Coating
1 (12 oz) package wonton wrappers, cut into thin strips
Frying
4 cups vegetable oil
For Serving
Sweet chili sauce
Extra green onions for garnish

Make the shrimp filling
Finely chop the shrimp (or pulse lightly).
Mix with green onions, soy sauce, fish sauce, salt, pepper, and sugar.
Add egg and rice flour, stirring until the mixture becomes slightly sticky and holds together.
Prepare the coating
Cut wonton wrappers into thin strips and place in a bowl so they’re ready for coating.
Form the balls
Scoop about 2 tablespoons of shrimp mixture and roll into balls.
Place each ball into the wonton strips and gently press so the strips stick all around.
Fry until golden
Heat oil to 350°F (175°C).
Fry shrimp balls in batches for 5–6 minutes until deeply golden and crispy.
Do not overcrowd the pan.
Drain & serve
Remove and drain on paper towels.
Garnish with green onions and serve hot with sweet chili sauce.
