Super Juice Is Dead

Okay, this statement is overly dramatic but hear me out. Firstly, super juice is a brilliant concept to extend citrus yields, extend shelf life and save money whilst being more sustainable… but when I first tried it I wasn’t 100% happy using it in citrus-forward drinks such as a Daiquiri.
Pseudo Citrus is another story (IMO). Created by @newratcity (Brian Tasch) and perfected in 2023. It tastes far closer to to fresh juice and further extends the yields when compared to super juice. The key difference is a touch of sugar, a pinch of salt and the removal of the fresh juice (which shortens the shelf life and contributes to degradation in flavour).

PSEUDO LEMON
30g lemon peel
30g sugar
27g citric acid
3g malic acid
1g sea salt
500ml water
PSEUDO LIME
30g lime peel
30g sugar
24g citric acid
12g malic acid
1g sea salt
500ml water
步骤
Add all ingredients and blend for 15-20 seconds
Strain and bottle
Store in fridge (lasts approx. 3 weeks)
