½ cup oat flour

½ tsp baking powder

2 tbsp melted butter or coconut oil 🧈

¼ tsp nutmeg (optional)

How to make them:

1. Preheat oven to 350°F 🔥 and line a baking sheet

2. Mix cottage cheese, maple syrup, vanilla, and melted butter until smooth 🥣

3. In another bowl, combine oats, oat flour, cinnamon, baking powder, salt, brown sugar, and nutmeg

4. Pour wet into dry and mix until a thick dough forms

5. Let sit for 5 minutes so oats absorb moisture ⏱️

6. Scoop onto baking sheet and flatten slightly 🍪

7. Bake 12–15 minutes until lightly golden
