40ml Gin
20ml Saké
25ml Lemon Juice
20ml Yuzu Cheong (previous video)
2 Shisho Leaves
Shaken, served over ice, topped with a splash of soda.
Yuzu Cheong & Chamomile Foam:
100ml Yuzu Cheong
100ml Chamomile Tea
2g Methylcellulose (thank you to @moresavorygoods for the lesson on this one)
½ Xanthan Gum
Pinch of salt

Add methylcellulose to warm tea and blend. Add cheong and xanthan once cooled and blend again. Charge with N2O.
