2 oz Brown Butter Washed @mijentatequila Reposado*
2 ½ oz Fresh Grapefruit
½ oz Fresh Lime
½ oz Simple Syrup
3-4 Drops of Saline Solution*
Soda Water
Grapefruit Wedge
Build into a glass, swizzle, and top with ice.
This is a silky, velvety riff on the original paloma but this time with Mijenta Tequila Reposado at the base. Here the fat washing process allows the butter to add an extra layer of texture and flavor to the spirit that complements those cooked agave and citrus notes.
Brown Butter Washed Reposado Tequila- combine 10 oz of tequila into a mason jar with 2 oz of browned liquid butter. Seal, shake, and let it sit in the freezer at a minimum of 3 hours to overnight. Strain infusion out through 2-3 coffee filters to remove particles. Once filtered, bottle the infused tequila and store in the fridge for up to 3 weeks.
Saline Solution- combine 80 grams of warm water to 20 grams of salt and shake until most of the salt has dissolved. Bottle and refrigerate. Only use 2-3 drops to enhance the flavors of your cocktails.
