Rhubarb Crisp

1 1/2 lbs rhubarb, cut into 1'' pieces

2/3 c sugar

zest and juice of one orange (or two small blood oranges)

few drops rose extract

pinch allspice

pinch salt

1 recipe basic crisp topping using 1/4 t cinnamon and 1/4 t allspice as spice

Divide fruit among 7 buttered crisp dishes.

Cover with chilled crisp topping.

Bake at 400 degrees for 20-25 mins.

Variation: Add 1 c quartered strawberries.
