You’ll need:
3 big onions (julienned + sautéed)
5 chicken thighs (paprika, turmeric, cayenne, onion/garlic powder, chicken bouillon, salt, pepper)
2 big pinches saffron (steeped in water)
Juice of 1 lemon
6 egg yolks
3 cups yogurt
1 more tsp chicken bouillon + salt
5 cups basmati rice (parboiled for 5 minutes in boiling water)
1 cup barberries (cooked in butter + 2 tbsp rose water or sugar)
Butter for pan
Garnish: more barberries, pistachios, yogurt, torshi

Cook onions until golden, add chicken + spices, sear, finish with saffron water + lemon. Set aside.
Mix eggs, yogurt, saffron water, bouillon, salt. Add rice, mix well.
Butter baking dish, layer half rice → chicken (cut or shredded) → barberries → rest of rice. Dot with butter.
Bake at 400°F ~75 min until crispy. (Glass dish = best way to check tahdig!)
Flip, garnish with pistachios + barberries. Serve with yogurt + torshi.
