High Protein Lemon Cheesecake

200 g low-fat cottage cheese (1 cup)

Juice of 1/2 lemon (15 ml)

Zest of 1 lemon

1 tbsp honey or sweetener of choice

1/2 tsp vanilla extract (2–3 ml)

Pinch of salt

1 tbsp crushed graham crackers (10 g)

Add all ingredients

Blend until smooth

Spoon into a dessert glass

Top with crushed graham crackers

Chill for 30–60 minutes (optional)
