Chicken Bacon Skewers

2 lbs boneless, skinless chicken thighs, cut into bite sized pieces
1 cup greek yogurt
1/4 cup ranch seasoning
2 tb dried dill
6 cloves garlic, mashed
1 12 oz package of bacon, slices cut in half and folded
2 red onions, roughly chopped
1 pint cherry tomatoes
Serve with: ranch dressing of choice

Cut chicken into cubes and add to a bowl, along with the greek yogurt, ranch seasoning, dill and garlic. Toss to coat well. Cover and marinate for 30 minutes (or longer). Preheat your grill to 500F. Next, assemble your skewers! Skewer the chicken onto skewers, then onion, then bacon, then a tomato, chicken and so forth, ensuring everything is packed together tightly. Once the grill is HOT, then add the chicken skewers and close the grill. Do not disturb them for about 10 minutes. Open the grill cover and rotate the chicken to the other side. If the chicken sticks, they are not ready to be flipped yet. Once they have been flipped, cook another 8-10 minutes, or until cooked through (this is 165F). Serve with your favorite ranch dressing and enjoy!
