Beef Bourguignon

Bacon

2.5lb Beef brisket, cubed

1 yellow onion, diced

3 carrots, peeled and chopped

2 tbsp butter (divided)

6 clove garlic, minced (divided)

2 tbsp tomato paste

2 tbsp flour

2-3 cups beef broth

About 1-2 cups red wine ~ Chianti, Pinot noir, or Merlot

5 sprigs fresh Thyme

2 Bay leaves

1lb baby Bella mushrooms, quartered

Preheat oven to 350°

Chop all ingredients and season meat with salt and pepper.

Fry bacon in Dutch oven, remove bacon and sear beef in bacon fat. Remove meat, add 1tbsp butter, onions, carrots and saute until soft. Add half of the garlic and saute for another minute. Add in tomato paste and flour then stir until combined. Pour in beef broth and wine. Add your thyme and bay leaves. Return beef and crumbled bacon back to the pot, give it a stir and place in oven for 2 hrs.

Wash and quarter your mushrooms, saute on a pan with 1tbsp butter, salt, pepper and remaining minced garlic until soft. Add mushrooms to Dutch oven, stir and cook for another 30minutes. When stew is finished add ontop of white rice or mashed potatoes paired with a glass of red wine.
